Healthy FITMOM, Nourished FITMOM: Almond Crusted Chicken Breasts

When my boys were younger eating well was not always easy.  Between diaper changes, spit up and playing Batman (I was Alfred); cooking a complicated dinner was not in the cards.  What my family needed were quick, simple (easy) and delicious recipes.  Now that the boys are older, complicated dinners still aren’t in the cards for me. So I am always on the hunt for something that can satisfy most of us.  Each week I will be sharing my favourite recipes with you to give you some inspiration in the kitchen and to help you be a healthy and nourished FITMOM! I hope that some of these recipes resonate with your taste buds and that you enjoy it!

I have made these delicious Almond Crusted Chicken Breasts a few times already.  They are soooo delicious! They are certainly easy to make and you will definitely impress your friends and family when you serve this up for dinner!

We purchased the ground Almonds from The Bulk Barn, because a) we don't have a food processor and b) no one has time to grind almonds by hand.

I have used yellow onions when I did not have shallots and no one noticed. I never have fresh rosemary, I always use dried, it still tastes amazing, but if you had fresh I am sure it would take it up a notch.

Everyone enjoyed the Strawberry Balsamic Sauce. Definitely take the 5 minutes you need to make it.  Your family will celebrate your innate awesomeness and your tastebuds are going to dance for you.

This makes a great weekday meal, or you can make it the next time you have guests for dinner.  It's quick and simple so you don't have to spend lots of time fussing in your kitchen.
