Healthy FITMOM, Nourished FITMOM

When my boys were younger eating well was not always easy.  Between diaper changes, spit up and playing Batman (I was Alfred); cooking a complicated dinner was not in the cards.  What my family needed were quick, simple (easy) and delicious recipes.  Now that the boys are older, complicated dinners still aren't in the cards for me. So I am always on the hunt for something that can satisfy most of us.  Each week I I will be sharing my favourite recipes with you to give you some inspiration in the kitchen and to help you be a healthy and nourished FITMOM! I hope that some of these recipes resonate with your taste buds and that you enjoy it!

I made these delicious chicken breasts for dinner last night.  This is the second time they have been through the family rotation.  The only adjustment I made was to reduce the amount of pepper.  The original post calls for 1tsp of pepper.  I adjusted to 1/4 tsp.  This way it works for everyone's tastebuds.
